Hervé Souhaut
Hervé Souhaut is a renowned winemaker in the world of natural wine. Based in the northern Ardèche region, in Arlebosc to be precise, Béatrice and Hervé Souhaut founded Domaine Romaneaux Destezet in 1993. A close friend of eminent winemakers such as René-Jean Dard and François Ribo, Thierry Alexandre and Matthieu Barret, Hervé acquired his experience working with them.
Domaine Romaneaux-Destezet is the fruit of Hervé's hard work. He has gradually increased his surface area by planting new vines and buying back plots, some of which contain 50 to 100-year-old vines. Situated opposite the Hermitage hill on the right bank of the Rhône, this terroir benefits from an ideal south-south-east exposure and the warm climate of the Doux delta, making it an ideal location for wine production. He currently cultivates 7 hectares of vines, which best express the region's characteristic granite terroir, with an annual production of around 25,000 bottles thanks to the purchase of grapes. Hervé Souhaut is committed to an agro-ecological approach, although he refuses certification, preferring his independence.
Its production philosophy seems simple on the surface, with manual harvesting, low-intervention vinification, low-temperature maceration and the absence of any oenological inputs. However, it's crucial to understand that there's more to making natural wine than just putting grapes in a vat. Hervé's reputation rests on his meticulous attention to detail in every decision and his in-depth knowledge of terroirs and vines, acquired over many years. Among his cuvées, from La Souteronne to La Syrah, via the prestigious Clos des Cessieux, each is synonymous with great pleasure. The grape varieties used, typical of the Northern Rhône Valley, include Viognier and Roussanne for the white wines, and Syrah and Gamay for the reds. The terroir is predominantly granite, with a good acidity. From the outset, Hervé Souhaut has been committed to producing wines that are as natural as possible to express the potential of the terroir.
