Clement Leclere-Minard

Clément Leclere is based in Coulommes-la-Montagne. After working with Julien Guillot and David Léclapart (no less!), Clément decides to take over a few hectares of family vines in the heart of the Montagne de Reims. The first obvious choice will be to manage his vines organically, even if a first vintage will give him a hard time and force him to postpone his conversion by a year. He cultivates Pinot Meunier, Pinot Noir and Chardonnay. Clément Leclere is setting up in the Coulomme cooperative winery. For him, as for other winegrowers in the village, it is about returning to the fundamentals of Champagne cooperative wineries . Not mixing grapes from one and the other, but sharing tools to produce wines that are unique and specific to the different cooperators. Thus, Clément benefits from a more than comfortable setting in which to produce his wine. Trained in a good school, Clément carefully selects the pressed fractions of his juices, then lets them ferment in indigenous yeasts. The aging then continues in oak barrels , both for the clear wines and for the coteaux champenois.
