Mas des Chimères
Mas des Chimères is located at the south-western end of the Terrasses du Larzac appellation, in Octon near Lac du Salagou. Mas des Chimères is a family-run winery founded in 1993 by Guilhem Dardé. Historically a mixed farming operation, the Dardé family turned to viticulture in the 1960s. Guilhem joined the domaine in 1974, working alongside his father and uncle, before setting up his own winery in 1993. His wife Palma and their daughter Maguelonne joined the estate in 1996 and 2008 respectively. The estate cultivates a wide variety of grape varieties on red soils and basaltic plateaus, producing organically grown wines. Varieties grown include Carignan, Grenache noir, Cinsault, Syrah, Mourvèdre, Merlot, Cabernet, Muscat, Terret, Viognier, Chardonnay, Grenache Blanc, Carignan Blanc and Roussanne. This diversity enables us to produce a wide range of red, white and rosé wines. Recognized for its respect for the environment, the domaine uses indigenous yeasts and limits cellar intervention to preserve the expression of terroir. Organic practices and natural winemaking are key elements in Mas des Chimères's approach to producing authentic, expressive wines. Mas des Chimères is renowned for its wines that reflect the rich terroirs of the Terrasses du Larzac. The combination of varied grape varieties and unique soils creates wines of character, appreciated both locally and internationally. Guilhem Dardé, with the help of his family, continues to perpetuate the estate's winemaking tradition, while constantly innovating to improve the quality and authenticity of his wines.
