After taking over two hectares of his family's vineyards, he decided to sign his wines under his own name and manage them in his own way. Clément Perseval is renowned for his respect for biodiversity and his natural approach to winemaking. In his vineyards, he favors environmentally-friendly methods to preserve and enhance the Chamery terroir. In the cellar, he adopts a natural winemaking method, obtaining a natural dosage thanks to the residual sugar from fermentation.
