Champagne Chavost

For two vintages now, the Champagne Chavost has been shaking up our vision of working in a cooperative . Chavost is the old name of the commune of Chavot-Courcourt, so it was obvious for winegrowers who loved their land and their village to give this name to their cooperative when they created it in 1946. It was therefore within this cooperative cellar that Fabian Daviaux decided to experiment with natural vinifications from 2020. He therefore isolated a 5-hectare plot already managed organically , harvested the grapes with the greatest care, and started the adventure. Fabian and his team's champagnes are undosed and made without added sulfites . He thus seeks to offer unique, distinctive and atypical wines. An atypical and courageous project to discover, whose wines are refined year after year.
