Domaine Einhart
THE Alsatian vineyard is full of many young and ambitious fields geared towards natural wine . It is at Rosenwiller , in the Bas-Rhin, where the adventure of Einhart family estate . Coming from a family of winegrowers, Nicolas Einhart joined the family estate in 1990. In 1997 he was one of the founding members of the association TIFLO whose main commitments are the maintenance of ecological refuge areas and the refusal of phytosanitary products the most harmful. It is therefore quite natural that Nicolas decides to convert his vineyard to organic farming in 2008 with a first production of certified grapes in 2011. The balance of biodiversity and respect for the terroir are at the heart of its concerns.
Théo , his son, is now taking up the torch, with a vision very focused on the natural wine and the maceration white wines , he decided to radically change the way of vinifying at Domaine Einhart. The objective always remains to produce healthy, balanced grapes, best reflecting the clay-limestone soil from Rosenwiller. It is with this high-quality raw material that Théo will subsequently be able to produce natural wines. The harvest is entirely carried out by hand, early and only in the morning for maximum freshness. The berries are then left to macerate for several days. As is often the case with natural wine, the only interventions that Théo allows himself consist of punching down, pumping over, aerating... no brutal intervention, but on the contrary, know-how. If he vinifies terroir by terroir, Théo does not then prevent himself from assembling, recomposing and recreating balances in his natural wines. Overall, he seeks to produce lively wines , powerful And expressive , reflections of the Rosenwiller terroir.
