Kevin Bouillet
A child of Pupillin , Kevin Bouillet, known as Pépin , launched his own estate in 2018. The young winemaker first learned his trade with Evelyne and Pascal Clairet of the Domaine de la Tournelle before creating his own farm. In 2018, he took over a few family plots, which he supplemented with the vines of retiring farmers. All to obtain a total of 4 hectares in Pupillin, near Arbois . From the creation of his estate, the young winemaker chose organic farming . It is on typical Jura terroirs such as the Jurassic limestone and the blue and grey marls characteristic of the region, which cultivate the five emblematic grape varieties of the Jura , as well as a more original variety, the Melon red tailed . In his vineyards, Kévin Bouillet adopts a meticulous and careful approach with the greatest respect for nature. Each treatment is carefully documented, the soils are meticulously maintained, and he ensures that the natural balance is preserved . In the cellar, Kévin Bouillet works on instinct. He regularly tastes his wines during maturation, explores and plays with the nuances of the vintages, and adapts to spontaneous fermentations . His goal is to create original natural wines while preserving the true essence of the Pupillin terroir and the Jura identity, but he does not prohibit himself from protecting the wines with homeopathic doses.
