Paolo Giordano
Paolo Giordano, a renowned winemaker based in Monforte d'Alba, in Italy's Piedmont region, manages a 5-hectare vineyard in the hamlet of Perno. This area is particularly well-suited to the cultivation of Nebbiolo, thanks to its fertile soils and favorable climate. Paolo Giordano adopts sustainable, organic viticulture, rigorously avoiding the use of chemicals. He favors natural methods for weed and disease management, thus respecting the environment. In the cellar, Paolo Giordano uses indigenous yeasts for fermentation, guaranteeing maximum authenticity of his wines. Maceration lasts between 20 and 40 days, depending on the wine, with daily pump-overs to ensure optimal extraction of aromas and tannins. The wines are then aged for 6 to 18 months in used barrels and stainless steel vats, before being refined in bottles for a year. No filtration or fining is practiced, and the addition of sulfur is strictly limited to what is necessary, thus preserving the purity and quality of the wine. Paolo Giordano produces two main types of wine: Langhe Nebbiolo and Barolo Perno. Langhe Nebbiolo is a red wine from vineyards planted in 1990 and 2010. It is aged for 6 months in steel tanks and used oak barrels, then matured for a further 6 months in bottle. Barolo Perno is a red wine from vines planted in 1986, which undergoes a 20-day maceration, is aged for 24 months in 10 hectoliter oak barrels, then refined for 12 months in the bottle.
