Thomas Pico
Thomas Pico from Domaine Pattes Loup works around ten hectares in the Chablis appellation, he is based in Courgis . Thomas spent most of his childhood in this small village in Chablis, surrounded by his father and grandfather, both winegrowers. Very quickly attracted to vines and wine, he very quickly completed a BTS in viticulture and oeno at the Beaune wine school. Very early on, organic farming became obvious: for his health, that of his loved ones and respect for the environment. He has been certified since 2009. Gradually, Thomas Pico will purify his vinifications. All the wines ferment with indigenous yeasts on lees and without sulfur. They are then aged either in vats or in barrels of different sizes. Thomas is convinced that the aging time is a decisive parameter in the quality of the wines, so he decided from the 2018 vintage to extend the aging on his Chablis Villages but also on his Premiers Crus. The wines will be aged for at least 30 months, and sometimes much longer. Each visit to the estate impresses us a little more than the previous one, as Thomas constantly knows how to question himself and develop his practices. During our last visit in spring 2023 , we were able to see the scale of Thomas' latest challenge: agroforestry . In an island of vines that are unfortunately too often under the influence of chemistry, Thomas replants trees along the edges of his vines and in the rows. Today, the wines of Domaine Pattes Loup are among the finest examples of natural wines in Chablis .
