Il s'accorde parfaitement avec des fruits de mer, des poissons grillés ou un fromage de chèvre frais.

Thomas Pico du Domaine Pattes Loup travaille une dizaine d’hectares en appellation Chablis, il est installé à Courgis. Thomas a passé l’essentiel de son enfance dans ce petit village du chablisien, entouré de son père et de son grand-père, tous les deux vignerons. Très vite attiré par la vigne et le vin, il réalise très rapidement un BTS viti-oeno à l’école viticole de Beaune. Très tôt, la culture biologique est devenue une évidence : pour sa santé, celle de ses proches et le respect de l’environnement. Il est ainsi certifié depuis 2009. Progressivement, Thomas Pico va épurer ses vinifications. Tous les vins fermentent en levures indigènes sur lies et sans soufre. Ils sont ensuite élevés soit en cuves soit en fûts de différentes tailles. Thomas est convaincu que le temps d’élevage est un paramètre décisif dans la qualité des vins, il décide donc à partir du millésime 2018 d’allonger les élevages sur ses Chablis Villages mais aussi sur ses Premiers Crus. Les vins feront minimum 30 mois d’élevage, et parfois bien plus. Chaque visite au domaine nous impressionne un petit peu plus que la précédente tant Thomas sait constamment se remettre en question et faire évoluer ses pratiques. Lors de notre dernière visite au printemps 2023, nous avons pu constater l’ampleur du dernier défi de Thomas : l’agroforesterie. Dans un îlot de vignes trop souvent malheureusement sous l’emprise de la chimie, Thomas replante des arbres en bordure de ses vignes et dans les rangs. Aujourd’hui, les vins du Domaine Pattes Loup font partie des plus beaux exemples de vins naturels sur Chablis.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
