The Alsatian vineyard is full of many young and ambitious estates focused on natural wine. It is in Rosenwiller, in the Bas-Rhin, that the adventure of the Einhart family estate begins. Coming from a family of winegrowers, Nicolas Einhart joined the family estate in 1990. In 1997 he was one of the founding members of the TIFLO association whose main commitments are the maintenance of ecological refuge zones and the refusal of the most harmful phytosanitary products. It is therefore quite natural that Nicolas decided to convert his vineyard to organic farming in 2008 with a first production of certified grapes in 2011. The balance of biodiversity and respect for the terroir are at the heart of his concerns. Théo, his son, is now taking up the torch, with a vision very focused on natural wine and maceration white wines, he decides to radically change the way of vinifying at Domaine Einhart. The goal always remains to produce healthy, balanced grapes, best reflecting the clay-limestone terroir of Rosenwiller. It is with this high-quality raw material that Théo will subsequently be able to produce natural wines. The harvest is entirely carried out by hand, early and only in the morning for maximum freshness. The berries are then left to macerate for several days. As is often the case with natural wine, the only interventions that Théo allows himself consist of punching down, pumping over, aerating... no brutal intervention, but on the contrary, know-how. If he vinifies terroir by terroir, Théo does not prevent himself from then blending, recomposing and recreating balances in his natural wines. Overall, he seeks to produce lively, powerful and expressive wines, reflections of the terroir of Rosenwiller. A must-try from Domaine Einhart: Muscana, a maceration of Muscat d'Alsace. An ideal wine for discovering macerated white wines!

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
