Hervé Souhaut est un vigneron de renom dans le monde du vin naturel. Installé en Ardèche Nord, à Arlebosc plus précisément, Béatrice et Hervé Souhaut ont créé le Domaine Romaneaux Destezet en 1993. Proche de vignerons éminents tels que René-Jean Dard et François Ribo, Thierry Alexandre, ou encore Matthieu Barret, Hervé a acquis son expérience en collaborant avec ces derniers. Le Domaine Romaneaux-Destezet, créé en 1993, est le fruit du labeur acharné d'Hervé. Il a progressivement augmenté sa surface en plantant de nouvelles vignes et en rachetant des parcelles, dont certaines abritent des vignes vieilles de 50 à 100 ans. Situé en face de la colline de l'Hermitage sur la rive droite du Rhône, ce terroir bénéficie d'une exposition idéale au sud-sud-est et du climat chaud du delta du Doux, ce qui en fait un lieu privilégié pour la production de vin. Actuellement, il cultive 7 hectares de vignes, qui expriment au mieux le terroir granitique caractéristique de la région, avec une production annuelle d'environ 25 000 bouteilles grâce à l'achat de raisins. Hervé Souhaut s'engage dans une approche agroécologique, bien qu'il refuse les certifications, privilégiant son indépendance. Sa philosophie de production semble simple en apparence, avec des vendanges manuelles, des vinifications peu interventionnistes, des macérations à basse température, et l'absence de tout intrants oenologiques. Cependant, il est crucial de comprendre que faire du vin naturel ne se limite pas à mettre des raisins dans une cuve. La renommée d'Hervé repose sur sa minutie dans chaque décision et sa connaissance approfondie des terroirs et des vignes, acquises au fil des années. Parmi ses cuvées, de La Souteronne à La Syrah, en passant par le prestigieux Clos des Cessieux, chacune est synonyme de grand plaisir. Les cépages utilisés, typiques de la vallée du Rhône Nord, incluent le Viognier et la Roussanne pour les vins blancs, et la Syrah et le Gamay pour les vins rouges. Le terroir se compose donc principalement de Granit, offrant une belle acidité. Dès ses débuts, Hervé Souhaut s'est engagé à produire des vins aussi naturels que possible pour exprimer le potentiel du terroir.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
