L'année 2020 a marqué le début de l'aventure pour Sagesse des Sols, une histoire menée par Cathy et Fred. Pour Fred, cette aventure représente la métamorphose du vignoble familial situé en Anjou, une transformation vers la viticulture biologique. Les vignes, où poussent des cépages tels que le Grolleau, le Chenin, le Cabernet Franc, le Cabernet Sauvignon et le Pineau d'Aunis, dont certaines ont plus de 50 ans, ont forgé sa passion gustative et fait du raisin son fruit préféré. Parmi tous, son coup de cœur va au Grolleau, avec son côté friand, gourmand et juteux. Pour Cathy, cette aventure est avant tout une passion pour les saveurs et les couleurs. Son enfance passée dans l'univers de la production de légumes, ses études à Bordeaux et son expérience en vinification au Liban, en Afrique du Sud et en Australie l'ont façonnée en une dégustatrice avertie. Toujours avide de découvertes, elle consacre temps et attention à mettre en lumière les plaisirs du quotidien à travers ses photographies. Le domaine Sagesse des Sols réalise un travail minutieux dans les vignes pour révéler les multiples terroirs situés à moins d'un kilomètre de la cave. Ils cultivent des cépages ligériens tels que le Chenin ainsi que des variétés locales de l'Anjou, notamment le Grolleau et le Pineau d'Aunis. De la taille des vignes au travail du sol, en passant par la dégustation des baies avant les vendanges, la démarche de Cathy et Fred vise à privilégier le fruit, la fraîcheur et l'équilibre du vin. Le vignoble s'étend sur des schistes gréseux traversés par des veines de quartz localisées, surplombant le Layon. Le sous-sol argilo-sableux confère une fraîcheur en profondeur, insufflant aux vins l'équilibre et la fraîcheur recherchés. Pour maintenir cette autonomie, le sol est enrichi avec du fumier de bovins élevés localement et couvert de féverole et d'avoine. Les lièvres se délectent particulièrement de la féverole tout en trouvant un abri protecteur parmi les vignes. Leurs cuvées, d'une grande finesse, méritent d'être goutées. Notamment, leur cuvée "Toucher Terre," un Chenin vinifié 12 mois en fût, issue du lieu-dit "Les Ruaux," est un coup de cœur. Tranchant et aérien, avec des notes boisées subtiles, ce Chenin complexe offre une superbe persistance en bouche, une expérience gustative qui vous emportera vers des sommets de plaisir.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
