Le Domaine des 13 Lunes est situé dans les hauteurs du parc naturel de la Chartreuse, à la lisière de la forêt, qui lui offre un cadre unique pour la création de vins de montagne. Nichées à une altitude de 500 mètres, les vignes ne semblent pas très élevées, pourtant le majestueux Mont Granier qui les surplombe, s'étend à plus de 1500 mètres plus haut. Et ce dernier joue un rôle essentiel dans la régulation du climat. Il peut décider si la région sera soumise au froid ou à la chaleur, protégée ou exposée à des tempêtes. Le domaine, géré par Sylvain Liotard, se caractérise principalement par un encépagement local fait de la Jacquère, de l'Altesse, de la Mondeuse, du Gamay et du Velteliner. Ici toutes les vignes sont cultivées en agriculture biologique et en biodynamie. Le terroir, formé par un important éboulement du 13e siècle, est riche en calcaire de différentes tailles, mélangé à des limons et de l'argile en proportions variées.Les vignes sont plantées en rangs serrés, avec une densité de 7500 à 10 000 pieds par hectare. Le travail en biodynamie implique une attention particulière aux sols, la prévention des maladies, l'utilisation de décoctions et tisanes à base de plantes, tout en intervenant le moins possible lors de la vinification. Les pratiques traditionnelles, telles que l'application de bouse de corne et de silice de corne, des doses minimes de cuivre, un peu de soufre, des tisanes et l'utilisation de levures indigènes, sont privilégiées par Sylvain et son équipe.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
