Émilien Feneuil, vigneron en Champagne, est une figure montante de la viticulture champenoise grâce à son approche innovante et respectueuse de l'environnement. En 2006, il reprend une petite propriété viticole et, dès 2008, se convertit à la biodynamie, une méthode de culture qui accorde une attention particulière aux sols et à la biodiversité. Passionné par la nature, Émilien utilise des méthodes naturelles comme les huiles essentielles, l'argile et le miel pour traiter ses vignes, tout en réduisant au minimum l'utilisation de soufre et de cuivre. Son domaine, qui s'étend sur 2,35 hectares et réparti sur trois villages, cultive quatre cépages distincts : le Pinot Meunier, le Chardonnay, le Pinot Noir et le Petit Meslier. Cette diversité permet à Émilien Feneuil de produire environ 4 000 bouteilles de champagne et de côteaux champenois par an. Les champagnes d'Émilien Feneuil sont reconnus pour leur finesse et leur complexité, et nécessitent parfois du temps pour révéler toute leur profondeur et leur richesse aromatique. L'engagement d'Émilien Feneuil envers des pratiques viticoles respectueuses de l'environnement et sa quête de diversité dans ses cultures font de lui un vigneron respecté de la Champagne. Il a su allier tradition et innovation pour créer des vins authentiques qui reflètent le terroir champenois. Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
