Le nom "Overnoy" est un nom familier pour tous les amateurs de vins jurassiens. Guillaume Overnoy, le petit-neveu de Pierre Overnoy, confirme que la famille Overnoy et le Jura forment une alliance qui perdure. Guillaume a pris les rênes du domaine familial en 2014, situé à Orbagna dans le Sud Revermont, et il s'est engagé fermement en faveur d'une viticulture respectueuse de l'environnement. Ce jeune vigneron a une vision claire : élaborer des vins vivants et purs. Il a entrepris la conversion des parcelles vers l'agriculture biologique, témoignant de son dévouement envers des pratiques agricoles durables. Les cépages Chardonnay, Savagnin pour les blancs, et Trousseau, Pinot Noir, et Poulsard pour les rouges, sont choyés et bénéficient de l'influence des terroirs variés de la région. En matière de vinification, Guillaume Overnoy se démarque par son savoir-faire. Il limite l'usage de soufre, privilégie les fermentations enclenchées par les levures indigènes, et opte pour des élevages prolongés en fûts. Cette approche a modifié le style des vins du domaine, les rendant plus digestes et vibrants. Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
