Domaine Pierre et Jean Gonon, located in the Saint-Joseph appellation in the northern Rhône Valley, is an essential reference. Founded in the 1950s by Pierre Gonon, the estate is now run by his sons, Jean and Pierre, who passionately continue the family tradition. The Gonon brothers cultivate around 10 hectares of vines according to the rigorous principles of organic farming, also integrating biodynamic practices to strengthen the vitality of the soils and the health of the plants. On the steep slopes of Saint-Joseph, the work is mainly manual, avoiding the use of heavy machinery to preserve the structure and richness of the soils. The winemaking methods adopted by the Gonons are traditional and low-intervention. Fermentations are done in whole bunches, a technique that preserves the purity and typicity of the grapes. The aging takes place in used oak barrels, bringing complexity and balance to the wines without dominating their natural character. The estate produces mainly red and white wines under the Saint-Joseph appellation. The red wines, made from Syrah, are particularly appreciated for their aromatic complexity, combining notes of black fruits, spices and violet. Their structure is both ample and balanced, offering a good aging capacity. The white wines, for their part, are distinguished by their finesse and elegance, with delicate aromas and a marked minerality. Each plot of the Gonon estate contributes uniquely to the final cuvée, adding depth and richness to the wines. This plot-by-plot approach allows the diversity and typicality of the Saint-Joseph terroirs to be fully expressed. Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
