Valfaccenda, run by Luca Faccenda and his wife Carolina Roggero, is a winery located in the heart of the Roero appellation in the Piedmont region of Italy. Founded in 2010, the winery is dedicated to showcasing the region’s traditional grape varieties, primarily Nebbiolo and Arneis. Luca and Carolina cultivate approximately five hectares of vines, spread across several plots, including renowned crus such as Valmaggiore, according to the principles of organic and biodynamic agriculture. The Valfaccenda vineyard is characterized by sandy and calcareous soils and steep slopes, making mechanization impossible and requiring intensive manual labor. In the winery, Luca Faccenda takes a traditional, low-intervention approach, using indigenous yeasts and involving filtration and excessive sulfur additions. The vinifications include long macerations, and the aging is done in cement vats and old barrels, allowing a pure and authentic expression of the dried grapes. Valfaccenda is distinguished by its commitment to sustainable viticulture and a winemaking philosophy that favors the faithful expression of the terroir. The wines produced here convey a true passion for nature and respect for winemaking traditions. Through their dedication and meticulous approach, Luca and Carolina manage to capture the very essence of Roero in every bottle. Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
