The Jacques Carillon estate, located in Puligny-Montrachet in Burgundy, is a living illustration of the Carillon family's winemaking heritage, which has been cultivating vines since the 16th century. After the ravages of phylloxera and the First World War, the estate was planted with Pinot Noir after 1918. In 1960, under the direction of Louis Carillon, the estate abandoned mixed farming to devote itself entirely to Chardonnay. This choice was accompanied by an early commitment to sustainable cultivation, with manual harvests, a less common practice at a time when mechanization was becoming the norm. In 2010, the family estate was divided between the two brothers, Jacques and François Carillon. Jacques took charge of 5.5 hectares of vines, including a beautiful 0.5 hectare plot of Bienvenues-Bâtard-Montrachet. His management of the estate is marked by a classic approach that respects the terroir of Puligny-Montrachet. Jacques Carillon favors the moderate use of new barrels (20 to 25%) so as not to dominate the wine with excessive woody notes. He aims for just the right maturity to preserve the natural acidity of the raisins, essential for the balance and freshness of the wines. After aging for 12 months in barrels, the wines are refined for an additional six months in stainless steel vats, which contributes to their finesse and purity. Jacques Carillon wines are distinguished by their finesse, elegance, freshness, complexity and minerality. They are particularly renowned for their aging capacity and their faithful expression of the Puligny-Montrachet terroir. Despite a relatively small production, these wines are highly sought after and are considered timeless examples of great Puligny-Montrachet.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
