In 2004, Oronce de Beler, driven by his passion for Burgundy Pinot Noir, decided to leave Paris and settle in Vosne-Romanée. He then embarked on a whole series of experiences in the world of wine, including viticultural training in Beaune, winemaking internships at family estates, and even the creation of a horse-drawn ploughing business in this Burgundy region of the Côte d'Or. And it was following all these encounters, enriching exchanges, and numerous tastings that La Maison Romane emerged. During the 2005 harvest, Oronce de Beler purchased his first grapes, marking the beginning of his winemaking adventure. From the outset, he adopted a consistent winemaking approach: minimalist and natural, with intervention and sulfur use reduced to the bare minimum. His goal is to preserve the purity of the fruit and the authentic expression of the terroirs. He systematically opts for whole-bunch vinification. In 2017, La Maison Romane moved to Nuits-Saint-Georges, providing a winemaking space in a more spacious vaulted cellar, thus allowing for further development of the estate. Obviously, the starting point of this entire process is the grape, which is why Oronce cultivates close relationships with talented winemakers, whose practices are oriented towards organic farming, biodynamics, or viticultural methods that respect the soil and its ecosystem. The harvest is done manually, with careful selection of each bunch, both in the vineyard and on the sorting table, guaranteeing the purity of the wine. La Maison Romane prioritizes the very highest quality of the grapes. In the winery, interventions are reduced to the bare minimum, with punching down limited to the final phase of vinification, and minimal, if any, use of sulfur. The wines are aged for 12 months in old oak barrels. Since its inception, the house has maintained a philosophy of no fining and no filtration, and each bottle is hand-bottled, with a wax seal adding a touch of authenticity to all their vintages. This commitment to purity, respect for terroir, and simplicity in winemaking characterizes Oronce de Beler's meticulous work at Maison Romane.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
