Champagne winemaker Émilien Feneuil is a rising star in the Champagne viticulture sector thanks to his innovative and environmentally friendly approach. In 2006, he took over a small wine estate and, in 2008, converted to biodynamics, a cultivation method that pays particular attention to soils and biodiversity. Passionate about nature, Émilien uses natural methods such as essential oils, clay and honey to treat his vines, while minimizing the use of sulfur and copper. His estate, which covers 2.35 hectares and is spread across three villages, cultivates four distinct grape varieties: Pinot Meunier, Chardonnay, Pinot Noir and Petit Meslier. This diversity allows Émilien Feneuil to produce approximately 4,000 bottles of Champagne and Côteaux Champenois per year. Émilien Feneuil’s champagnes are renowned for their finesse and complexity, and sometimes require time to reveal their full depth and aromatic richness. Émilien Feneuil’s commitment to environmentally friendly viticultural practices and his quest for diversity in his crops make him a respected winemaker in Champagne. He has combined tradition and innovation to create authentic wines that reflect the Champagne terroir. The natural methods he uses not only preserve the health of the soils and vines, but also contribute to the production of exceptional quality champagnes. Émilien Feneuil’s working philosophy is based on a deep understanding of the interactions between plants, soils and climate. Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
