Stéphane Regnault is a winemaker in the heart of the Côte des Blancs, in the grand cru village of Mesnil-sur-Oger. According to him, the winemaker's job is to help the vine best express the terroir. Time is essential, indispensable, to understand one's terroir. It will therefore take Stéphane several years of work in the vineyards before starting to make his wine. He is converting his estate first to sustainable viticulture (HVE & VDC certification), then to organic farming since the 2020 harvest. In the same vein, he is influenced by biodynamic viticulture, the use of horn dung (500P), silica (501), valerian (507), infusions and decoctions of plants (nettle, horsetail, comfrey, yarrow, etc.). All these practices contribute to the reduction of copper and sulfur doses, but also to accentuate respect for the soil and living things. At Stéphane Regnault's, winemaking is simple. A beautiful, expressive grape is enough in itself. He chooses to make single-plot champagnes. Each plot has its own history, its own identity, which is also why all fermentations during the harvest are spontaneous; the idea is that each plot has its own biodiversity, its own flora. The ferments, naturally present on the skins of the grapes, are different from one plot to another! Fermentation therefore occurs naturally. Once fermentation is complete, it's time for aging. Long months of work with the lees allow the wine to develop and acquire complexity. The use of SO2 remains exceptional.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
