Coming from a well-exposed limestone hillside, this 2023 Pinot Noir expresses all the richness and finesse of its terroir. The vinification, mixing whole and destemmed bunches, magnifies its aromas of black cherry, redcurrant and a hint of liquorice. On the palate, the 10-month aging in barrels gives it depth and an elegant structure. An ideal choice to enhance a duck breast with pepper or a mature cheese such as Saint-Nectaire.

Raphaëlle Guyot embodies youth and audacity in the Burgundy wine world. Her journey began in 2015, when she obtained her BTS in viticulture-oenology in Beaune. Eager to acquire a diversified experience, she trained with renowned estates such as Thibault Liger Belair, la Grange Tiphaine, and Vincent Pinard, thus broadening her wine horizons across France.

It was in 2018 that Raphaëlle decided to return home, to the peaceful region of Puisaye-Forterre, between Sancerre and Chablis, to make her dream come true: to create her own estate. With a few acres of vines buried under brambles, she undertook the ambitious challenge of replanting around ten hectares, reviving land that had been home to vines since the 19th century. Her project highlights the region's limestone hillsides, carrying the hope of inspiring other winegrowers to follow in her footsteps.

In the vineyards, Raphaëlle favors an environmentally friendly approach, forgoing chemicals in favor of organic farming. Concerned about preserving biodiversity, she also initiated the practice of agroforestry by planting hundreds of trees on her estate. The harvests are manual, the sorting of the grapes meticulous, and the winemaking is intended to be as non-interventionist as possible, with the only addition of a hint of sulfur to stabilize the wines, thus registering her approach in a natural wine perspective. The vintages then rest in vats or barrels, maturing peacefully for 7 to 12 months depending on their character.

Alongside her own production, Raphaëlle carefully selects grapes from the Auxerrois terroirs, from estates committed to organic farming, to vinify and age her whites. In the glass, her wines stand out for their freshness and mineral character for the whites, while the reds seduce with their fruitiness and liveliness, offering an authentic and modern interpretation of the Burgundy terroir. Raphaëlle Guyot's wine history bears witness to a passion and commitment that promise new discoveries and great successes in the world of wine.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
