In 1960, Patrice Michon decided to put down roots in Brem-sur-Mer, a haven in Vendée, where he cultivated a few hectares of vines inherited from his father. In the 1980s, his two sons Eric and Thierry contributed to a major turning point for the estate. Together, they relocated their winery to the Île d'Olonne, convinced of the potential of the Olonnes terroir. They invested in the acquisition of new plots, initiating a wine journey that continues to this day. In 2013, the passion for vines and wine was passed on to the third generation of the Michon family when Antoine, Thierry's son, joined the Saint-Nicolas estate. The common thread of the estate since its beginnings has always been the production of healthy wines. In 1995, the estate converted to biodynamics. Under the beneficial influence of the ocean, Domaine Saint-Nicolas produces exceptional wines. Among the grape varieties cultivated, we find Chenin and Chardonnay for the whites, characterized by aromas of yellow stone fruits and a saline finish. The reds, including Pinot Noir (represented by vintages such as Jacques and La Grande Pièce), Gamay, Négrette and Cabernet Franc, benefit from a long aging, offering wines of great elegance. With a total surface area of 32 hectares, the vintages of Domaine Saint-Nicolas are characterized by finesse and minerality. The wines surprise with their particularly saline character, a reflection of the influence of the ocean. We find plenty of delicate aromas of white flowers, vine peach, buttery, lemony and sweet almond evocations in Thierry Michon's vintages. The imprint of the sea, with its characteristic tension, is felt at every stage of the tasting, giving the wines a unique identity. Domaine Saint-Nicolas embodies a true treasure of viticulture, where respect for nature and the quest for excellence are the key words. We encourage you to taste!

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.

We strive to offer you wines from artisan wines, from estates on a human scale and often family-owned. And that's why we take the time to travel across France from vineyard to vineyard in search of these natural wines that thrill us.
We are particularly keen to introduce you to the new winegrowers of tomorrow who work tirelessly to offer us magnificent wines.
