En 1960, Patrice Michon décide de poser ses racines à Brem-sur-Mer, un havre en Vendée, où il exploite quelques hectares de vignes héritées de son père. Dans les années 1980, ses deux fils Eric et Thierry vont contribuer à un tournant majeur pour le domaine. Ensemble, ils délocalisent leur chai sur l'Île d'Olonne, convaincus du potentiel du terroir des Olonnes. Ils investissent dans l'acquisition de nouvelles parcelles, initiant un voyage viticole qui se poursuit jusqu'à aujourd'hui. En 2013, la passion pour la vigne et le vin se transmet à la troisième génération de la famille Michon lorsque Antoine, fils de Thierry, rejoint le domaine Saint-Nicolas. Le fil conducteur du domaine depuis ses débuts a toujours été la production de vins sains. Dès 1995, le domaine s’est converti à la biodynamie. Sous l'influence bienfaisante de l'océan, le Domaine Saint-Nicolas produit des vins exceptionnels. Parmi les cépages cultivés, on trouve le Chenin et le Chardonnay pour les blancs, caractérisés par des arômes de fruits jaunes à noyau et une finale saline. Les rouges, parmi lesquels le Pinot Noir (représenté par des cuvées telles que Jacques et La Grande Pièce), le Gamay, la Négrette et le Cabernet Franc, bénéficient d'un long élevage, offrant des vins d'une grande élégance. Avec une superficie totale de 32 hectares, les cuvées du Domaine Saint-Nicolas sont caractérisées par la finesse et la minéralité. Les vins étonnent par leur caractère particulièrement salin, un reflet de l'influence de l'océan. On retrouve de pleinsd d’arômes délicats de fleurs blanches, de pêche de vigne, d'évocations beurrées, citronnées et d'amande douce dans cuvées de Thierry Michon. L'empreinte de la mer, avec sa tension caractéristique, se ressent à chaque étape de la dégustation, conférant aux vins une identité unique. Le Domaine Saint-Nicolas incarne un véritable trésor de la viticulture, où le respect de la nature et la quête de l'excellence sont les maîtres-mots. On vous encourage à goûter !

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
