In the Côte des Bar, in the village of Montgueux, the vines of Champagnes Jacques Lassaigne draw their essence from a literally exceptional terroir. While the soils of the Aube are mainly composed of clay-limestone from the Portlandian or Kimmeridgian, those of Montgueux are based on chalk. Managed with passion and mastery by Emmanuel Lassaigne since 1999, these 4.7 hectares of family vineyard reveal all the richness of this unique terroir, often called the Montrachet of Champagne.

The vineyard, mainly planted with Chardonnay and a little Pinot Noir, is managed with the greatest respect for the environment, with a rigorous organic approach. No pesticides, chemical fertilizers or synthetic products are tolerated in these vineyards, where natural grassing is preferred and manual work is systematic.

The manual harvest is the prelude to a natural and minimally interventionist vinification in the cellar. Each plot is vinified with precision, allowing each vintage to reveal its own identity. The wines undergo a complete malolactic fermentation and are aged in barrels of one or more wines for 12 to 24 months, before resting in bottles for 1 to 5 years, depending on the vintages and cuvées.

The result? Champagnes vibrant with emotion, character and authenticity, true treasures of the vine that testify to the know-how and passion of an artisan winemaker. The low-intervention vinification, the aging on fine lees and the respect for the time necessary for each vintage give these champagnes a remarkable complexity and elegance.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
