Welcome to one of the emblematic estates of natural viticulture in the Loire: Clos du Tue Boeuf! Clos du Tue Boeuf, run by brothers Thierry and Jean-Marie Puzelat, was given a new lease of life in the early 1990s when they took over this 16-hectare estate. A key element of this story is that the vines had never been exposed to chemicals, thus offering an exceptional opportunity to the two brothers. Inspired by the late Marcel Lapierre, they immediately set about producing natural wines on this property located between the Touraine and Cheverny appellations, near Hervé Villemade in the Loire. In a short time, the estate expanded, incorporating the historic Clos des Montils, which covers just over 11 hectares, as well as plots on the Monthou-sur-Bièvre plateau, totaling around 3 hectares. This extension made it possible to add to the diversity of the clay-flint terroir on chalk a terroir of sands with gravels. The few remaining hectares are reserved for the preservation of the forest and wild areas to maintain a balanced ecosystem. In 2003, the Puzelat brothers created a trading structure to buy grapes from winegrowers who shared their philosophy during years of lean harvests. In 2004, a structure for importing foreign wines was created. In 2019, Jean-Marie retired, making way for the new generation. It was at this time that Thierry's daughters, Zoé and then Louise, joined Clos Tue-Boeuf full-time, inspired in part by the heritage of the winery which has influenced many young winegrowers. The estate is committed to organic viticulture and favors animal traction as much as possible to work the vines. The vinifications use exclusively indigenous yeasts, without recourse to other chemical inputs, with the exception of a possible use of sulfur in very small quantities during bottling (and even then, this is not systematic). The vinifications and aging are extended to refine the juices. The wines of Clos du Tue Boeuf have quickly become references in terms of natural wines, acclaimed for their frankness and sincerity. Originating from the beautiful Loire region, these wines are essential for any self-respecting wine cellar.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.

We strive to offer you wines from artisan wines, from estates on a human scale and often family-owned. And that's why we take the time to travel across France from vineyard to vineyard in search of these natural wines that thrill us.
We are particularly keen to introduce you to the new winegrowers of tomorrow who work tirelessly to offer us magnificent wines.
