Marie-Thérèse Chappaz, nicknamed "the great lady of Valais", is a winemaker and agricultural engineer specializing in oenology. In 2015, she was crowned "Swiss wine icon" by the Gault et Millau guide and received the title of "Lady of Wine" at the Villa d'Este Wine Symposium. As a teenager, she planned to become a midwife, but after an internship at the hospital, she turned to viticulture at the age of seventeen. She trained at the Changins engineering school and worked for six years in the cellar of this federal resort before taking over the family estate in 1987. Located in Fully, on the steep hillsides of Valais, the Marie-Thérèse Chappaz estate covers 10 hectares and is cultivated biodynamically. The vines, some of which were planted in 1924, are tended without herbicides or pesticides. Marie-Thérèse Chappaz’s winery, housed in a historic home built by her great-uncle Maurice Troillet, is where her wines are produced. Marie-Thérèse is best known for her Grains Nobles, sweet wines made from Marsanne or Petite Arvine, which are highly concentrated yet retain great freshness. Other notable vintages include Ermitage Grain d’Or, Grain Syrah and Grain Mariage. She also cultivates grape varieties such as Fendant, Dôle, Pinot Noir, Gamay and blends of Cabernet and Merlot. Marie-Thérèse Chappaz is a pioneer of Valais viticulture, alongside figures such as Corine Clavien-Defayes and Madeleine Gay. Her passion and commitment to sustainable and environmentally friendly winemaking practices have made her an iconic figure in Swiss wine. Her wines, although difficult to acquire, are highly sought after for their exceptional quality. Marie-Thérèse Chappaz continues to live and work in the historic house of Liaudisaz in Fully, where she perpetuates the family tradition while constantly innovating in her wine-growing practices.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
