Marie-Thérèse Chappaz, surnommée "la grande dame du Valais", est une vigneronne ingénieure-agronome spécialisée en œnologie. En 2015, elle a été couronnée « icône du vin suisse » par le guide Gault et Millau et a reçu le titre de « Lady of Wine » lors du Villa d'Este Wine Symposium. Adolescente, elle envisageait de devenir sage-femme, mais après un stage à l'hôpital, elle se tourne vers la viticulture à l'âge de dix-sept ans. Elle se forme à l'école d'ingénieurs de Changins et travaille six ans dans la cave de cette station fédérale avant de reprendre le domaine familial en 1987. Situé à Fully, sur les coteaux abrupts du Valais, le domaine de Marie-Thérèse Chappaz s'étend sur 10 hectares et est cultivé en biodynamie. Les vignes, dont certaines ont été plantées en 1924, sont soignées sans herbicides ni pesticides. La cave de Marie-Thérèse Chappaz, installée dans une demeure historique construite par son grand-oncle Maurice Troillet, est le lieu de production de ses vins. Marie-Thérèse est surtout célèbre pour ses Grains Nobles, des vins liquoreux à base de Marsanne ou de Petite Arvine, qui sont très concentrés tout en conservant une grande fraîcheur. Parmi ses autres cuvées remarquables, on trouve l'Ermitage Grain d'Or, Grain Syrah et Grain Mariage. Elle cultive également des cépages comme le Fendant, la Dôle, le Pinot Noir, le Gamay et des assemblages de Cabernets et Merlot. Marie-Thérèse Chappaz est une pionnière de la viticulture valaisanne, aux côtés de figures comme Corine Clavien-Defayes et Madeleine Gay. Sa passion et son engagement envers des pratiques viticoles durables et respectueuses de l'environnement ont fait d'elle une figure emblématique du vin suisse. Ses vins, bien que difficiles à acquérir, sont très prisés pour leur qualité exceptionnelle. Marie-Thérèse Chappaz continue de vivre et de travailler dans la maison historique de la Liaudisaz à Fully, où elle perpétue la tradition familiale tout en innovant constamment dans ses pratiques viticoles.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
