No, it's not a Pinot Gris, but the Savagnin "Fromenteau’"that is worked here, in the "En Chamblin" sector in Arbois, next to the "Bruyères" Triase marls. Thomas delights us with a truly "natural" wine, with controlled power, where the yellow fruit and very slightly orange character are multiplied tenfold (seven-hour maceration on skins). A modern vineyard, this Savagnin offers a different palette from anything we've ever tasted. Fans of Ganevat will be licking their lips.

Thomas Jacquin is a young winemaker working on just under 1 hectare of vines in AOC Arbois. After gaining valuable experience with Stéphane Tissot for five years, he decided to go solo in 2017. At the heart of his estate, Thomas mainly cultivates the emblematic Jura grape varieties, Savagnin and Ploussard. He is committed to an approach in favor of organic farming and for several years, his vines have been bathed in respect for nature, using clay and medicinal plants that he grows or harvests in the surrounding area for treatment. Working the vineyard occupies a central place in Thomas Jacquin's life. He devotes long hours to his precious plots, pampering each vine to extract the best from the grapes. In his cellar, he prefers to adopt a minimalist approach, seeking to let nature express itself fully. The harvests, meticulously destemmed, ferment in vats before being bottled by gravity. His micro-vat room located a few kilometers north of Arbois, in Marnoz, is the place where natural wines of beautiful flavor and frank minerality are born. In addition to his own estate, Thomas Jacquin also collaborates with the Domaine de la Loue. Far from following the current trend of overly light wines, his vintages reveal their true potential after a stay in the cellar.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
