The year 2020 marked the beginning of the adventure for Sagesse des Sols, a story led by Cathy and Fred. For Fred, this adventure represents the metamorphosis of the family vineyard located in Anjou, a transformation towards organic viticulture. The vines, where grape varieties such as Grolleau, Chenin, Cabernet Franc, Cabernet Sauvignon and Pineau d'Aunis grow, some of which are over 50 years old, have forged her passion for taste and made grapes her favorite fruit. Among all, her favorite is Grolleau, with its delicious, gourmet and juicy side. For Cathy, this adventure is above all a passion for flavors and colors. Her childhood spent in the world of vegetable production, her studies in Bordeaux and her experience in winemaking in Lebanon, South Africa and Australia have shaped her into a knowledgeable taster. Always eager for discovery, she devotes time and attention to highlighting the pleasures of everyday life through her photographs. The Sagesse des Sols estate carries out meticulous work in the vineyards to reveal the multiple terroirs located less than a kilometer from the cellar. They cultivate Loire grape varieties such as Chenin as well as local varieties from Anjou, including Grolleau and Pineau d'Aunis. From pruning the vines to working the soil, including tasting the berries before the harvest, Cathy and Fred's approach aims to favor the fruit, freshness and balance of the wine. The vineyard extends over sandstone schists crossed by localized quartz veins, overlooking the Layon. The clay-sand subsoil gives a deep freshness, infusing the wines with the balance and freshness they seek. To maintain this autonomy, the soil is enriched with manure from locally raised cattle and covered with fava beans and oats. Hares particularly enjoy fava beans while finding protective shelter among the vines. Their vintages, of great finesse, deserve to be tasted. In particular, their vintage "Toucher Terre," a Chenin vinified 12 months in barrels, from the place called "Les Ruaux," is a favorite. Sharp and airy, with subtle woody notes, this complex Chenin offers a superb persistence in the mouth, a taste experience that will take you to heights of pleasure.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
