The Vaillant family is first and foremost a family story. The Domaine Des Grandes Vognes has been passed down from generation to generation since the 17th century. Today, we find Jean-François and Laurence, brother and sister, at the head of the estate. They are located in Thouarcé with 55 hectares of vines spanning the Layon, part of which is attached to the famous Bonnezeaux appellation. The Domaine Des Grandes Vignes cultivates several typical Loire grape varieties: Cabernet Franc, Grolleau, Pineau d'Aunis for the reds, Chenin mainly for the whites. Their plots are on different exposures and different types of soil: gray and green schist, phtanite, quartz, shelled falun, sand, rolled gravel, etc. The Vaillant family has been practicing biodynamics since 2008, to express the authenticity of the wines, they pay particular attention to work in the vineyard. Biodynamics allows Domaine des Grandes Vignes to take a global approach to the plant and the environment based on the influences that come from the earth, air and water. The vine flourishes in the best possible environment, which makes it less sensitive to parasites and limits the applications of Bordeaux mixture. The development of microbial life in the soil is a priority so that the roots draw all the useful elements from the bedrock. Then, they promote the development of many annual and perennial herbs, which provide biodiversity that is favorable to the ecosystem. Domaine Des Grandes Vignes is also very attentive to the rhythm of the planets, this guides the work of the soil. On the winemaking side, they intervene very little on the wines, no exogenous inputs. All the estate's vintages are without added sulfites, unfined and unfiltered with the exception of wines with residual sugars (2 to 3 mg/L of SO2). Attentive to the lunar calendar, they favor fruit days for racking and bottling.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
