This Pinot Noir, with its deep, intense character, will stand up to tasty dishes such as jugged hare or beef bourguignon, enhancing every mouthful with its natural elegance. Well done Pierre !

La Maison en Belles Lies est un domaine emblématique de Bourgogne, fondé par Pierre Fenals, un ancien styliste passionné devenu vigneron. Situé à Saint-Aubin, au cœur de la Côte de Beaune, le domaine couvre environ 4 hectares, répartis sur différentes appellations prestigieuses, notamment Bourgogne, Saint-Aubin, Santenay, et Chassagne-Montrachet.
Le domaine est cultivé en biodynamie, une approche respectueuse de la terre et de la vigne. Pierre Fenals s'attache à favoriser la biodiversité et la vie des sols en excluant strictement les herbicides, pesticides et intrants de synthèse. Les vignes sont travaillées à la main, avec un soin particulier pour chaque parcelle, afin de favoriser une expression pure et fidèle des terroirs bourguignons.
En cave, la vinification est tout aussi naturelle et respectueuse. Les fermentations se déroulent spontanément grâce aux levures indigènes, et aucun sulfite n’est ajouté pendant le processus, afin de préserver l’intégrité et l’authenticité du vin. Les vins sont ensuite élevés longuement, souvent sur lies, pour développer toute leur complexité. Ils ne subissent ni collage ni filtration, garantissant une richesse aromatique et une texture exceptionnelles.
Les vins de la Maison en Belles Lies se distinguent par leur finesse et leur caractère unique, portant l’empreinte du terroir bourguignon dans chaque bouteille. Cette approche artisanale et engagée séduit les amateurs de vins naturels, en quête d’authenticité et de profondeur.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
