Jules Métras, son of renowned winemaker Yvon Métras, began his winemaking career in 2014 after training at the Beaune winemaking school and gaining experience abroad. Upon returning to Beaujolais, Jules began working alongside his father, managing the old Beaujolais-villages vines located around the family winery in Vauxrenard. Over the years, Jules gradually expanded his vineyard. He took over plots of Beaujolais-villages that had belonged to Jules Chauvet, an iconic figure in natural viticulture, and also added plots of Chiroubles, expanding his estate. Jules and Yvon's vineyard management is marked by a deep respect for nature. They work the soil without using chemicals, thus promoting biodiversity and healthy vines. The harvest is carried out late and by hand, allowing the grapes to be picked at perfect ripeness. In the cellar, Jules uses gentle and precise winemaking methods, including carbonic maceration. This technique, which involves fermenting whole grapes in an atmosphere saturated with carbon dioxide, allows for the extraction of fruity aromas and the production of wines of great finesse. Jules does not use sulfites, relying entirely on the natural yeasts present on the dried grapes for fermentation. Jules Métras' wines are distinguished by their density and minerality. They respect the natural and respectful approach of the new generation of Beaujolais winemakers. This working philosophy aims to produce authentic wines, which fully express the terroir and the characteristics of the grape varieties. Jules Métras embodies family tradition while bringing a modern and natural vision of viticulture. His commitment to environmentally friendly practices and his quest for excellence are reflected in every bottle, making his wines remarkable examples of the Beaujolais revival.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
