Philippe Viet, a former Parisian consultant, undertook a reconversion to viticulture in 2015. He trained with several renowned winegrowers, notably in Australia, with Bernard Baudry in the Loire in Chinon, and especially with Éric Janin in Beaujolais. Between 2015 and 2018, Philippe refined his skills in pruning, vineyard work, harvests and vinification with Éric Janin, where he even produced a test vintage of Chénas in 2017. Based in Villié-Morgon, in the heart of Beaujolais, a region famous for its natural wines, Philippe cultivates around 4 hectares of vines in the Régnié and Fleurie appellations. Passionate and methodical, he began a conversion to organic farming from the start in 2020, with the aim of producing wines that are as pure as possible. Philippe Viet produces wines intended for aging, characterized by a straight, slightly firm and very elegant style. He places great importance on the organic cultivation of his vines, favoring quality over quantity. His wines, particularly those of the Régnié and Fleurie appellations, are distinguished by their density and complexity, faithfully reflecting the terroirs of Beaujolais. Thanks to his passion for viticulture and the solid training acquired from great winemakers, Philippe Viet quickly established himself in the world of wine. His elegant and environmentally friendly wines demonstrate his commitment to sustainable and high-quality viticulture. By settling in Villié-Morgon, Philippe Viet chose an emblematic region to realize his vision of viticulture. His rigorous work and his respect for organic practices have allowed him to produce wines that are both authentic and refined, thus gaining the recognition of wine lovers.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
