A pure Syrah that hits hard. This wine from the Ardèche schist soils reveals slightly candied red plum, hints of incense, notes of wild walls and scrubland that transport you directly to the heart of the Rhône. On the palate, it is slender with fine tannins, a dry minerality and a spicy length that will not leave you. The estate has made a point of honor to respect the terroir to produce expressive and complex wines. For an original twist, accompany it with a wild mushroom pâté en croûte.

Domaine Balthazar, founded in 1931 by Casimir Balthazar, is an emblematic vineyard of the Cornas appellation, in the Rhone Valley. Continuity of production was ensured by René Balthazar until 2002, the year his son Franck took over the reins of the family estate. Passionate about organic viticulture, Franck Balthazar quickly knew the direction he wanted to give to his estate. An admirer of the classicism and elegance of Pierre-Marie Clape's wines, and a fervent defender of the frankness and naturalness of Thierry Allemand's wines, Franck represents a successful alliance of these two great styles of Cornas. Since the 2010 vintage, the estate has been converting to organic farming. Franck Balthazar favors natural and artisanal methods, working the soil with a pickaxe or winch, without herbicides or pesticides. In the winery, the vinifications are traditional with whole harvests, fermentations from indigenous yeasts, long macerations, and aging for 12 to 18 months in aged demi-muids, limiting the use of sulfur as much as possible. Franck Balthazar is widely recognized and appreciated by amateurs and critics for the remarkable quality of his wines. His commitment to sustainable practices and his respect for winemaking tradition make his vintages authentic examples of artisanal viticulture. The estate, located on steep hillsides with granite soils, mainly cultivates Syrah, the emblematic grape variety of Cornas, perfectly reflecting the unique terroir of the region. Franck's philosophy is based on a minimalist and respectful approach to nature. By working manually and using ecological practices, he seeks to maintain the natural balance of the vineyard and to produce wines that truly express their terroir. Whole harvests and fermentations with indigenous yeasts preserve the original characteristics of the grapes, while long macerations and aging in demi-muids bring structure and complexity to the wines. Domaine Balthazar wines are known for their depth, balance and ageing capacity. Each bottle tells the story of the Cornas terroir, with aromas of black fruits, spices and minerals, characteristic of the granite soils of the region. Franck Balthazar, through his commitment and passion, continues to honor the family heritage while bringing a personal and contemporary touch to the wine production of Cornas.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
