Hervé Villemade occupies a prominent place among the "institutions" of natural wine, alongside figures such as the Puzelat brothers of Clos Tue-Boeuf, the Mosses, the Bretons, and other natural wine pioneers. For nearly twenty years, Hervé Villemade has dedicated himself to the production of natural wines in the Loire Valley. In the heart of the Cheverny appellation, in Cellettes, Hervé took the reins of the family's 13.5-hectare estate in 1995, and in 1999, his sister Isabelle joined him. It was then that they began the complete conversion of the estate to organic farming, adopting hand-harvesting. Weedkillers and chemicals were banned, while vinification shifted toward a natural and gentle approach in the cellar. No additives are used in their wines, with the exception of anecdotal doses of sulfur during bottling. Indigenous yeasts are favored for fermentation. On the sandy and flint-clay soils of their magnificent terroirs, Hervé takes meticulous care of the vines, in the heart of preserved natural spaces, without "chemical" neighbors nearby, a rarity these days. Hervé Villemade has a true passion for indigenous grape varieties, such as Romorantin or Menu Pineau, and pursues a constant quest for the purity and freshness of the fruit. Alongside his main activity, Hervé Villemade founded a grape trading structure in 2008 to guarantee the economic balance of the estate by producing enough each year. Thanks to his commitment, Hervé Villemade succeeds in offering wines of remarkable drinkability and honorable aging potential. A true source of pleasure for wine lovers, especially since his work is enriched by aging in amphorae of all kinds, a passion he developed during a trip to Georgia, bringing depth and precision to his beautiful bottles.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
