Sylvain Dittière & Pauline Foucault, passionate winemakers, orchestrate their La Porte Saint Jean estate with a unique vision. The 6 hectares of the vineyard, located between Montreuil-Bellay and Doué-la-Fontaine, are divided into three distinct zones: La Perlée, Les Cormiers and the most recent: Les Pouches. These lands are home to three grape varieties: Chenin, Cabernet Franc, and a few ares of old Sauvignon Blanc vines, all managed using organic farming methods.

The diversity of the estate, with its clay-silt soils at La Perlée, clay-limestone with flint at Cormiers, and the work undertaken on Les Pouches since 2017, translates into an undeniable richness. Sylvain Dittière, a farmer's grandson, embodies a global vision of the development of the vineyard, favoring the virtues of agroforestry and a respectful ecosystem. Pauline Foucault, for her part, learned her trade at Clos Rougeard, co-managed at the time by her father.

By relying on organic farming, Sylvain and Pauline do not aspire to a specific label on their bottles, although all their wines are certified organic. Using herbal teas such as horsetail to combat powdery mildew and downy mildew, and willow bark to stimulate the vines’ natural defenses, they maintain a natural balance. Ploughing the steep slopes with horses and replacing missing vines illustrates their commitment to respectful practices, with minimal applications of sulfur and copper.

In line with the best estates in the region, La Porte Saint Jean produces lively, elegant and precise wines. The estate, with its 11 years of existence since the first vintage, stands out as a reference. The estate highlights its meticulous and natural approach: fermentations are simple and natural, without additives or yeast, followed by prolonged aging in barrels.

The fermentation process allows the wines to mature at their own pace in the constant cool environment of the cellar. At La Porte Saint Jean, infusion is preferred over extraction, giving its wines an elegant touch despite long macerations. Malolactic fermentations take place naturally in barrels, and maturation lasts 18 months for La Porte Saint Jean and Les Pouches Blanc, 24 months for La Perlée, Les Pouches Rouge, and Les Cormiers (100% new barrels). No sulfur is used during vinification, it can be added in tiny quantities before bottling to protect the wines if necessary.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
