La famille Vaillant, c’est avant tout une histoire de famille. Le Domaine Des Grandes Vognes se transmet de génération en génération depuis le XVIIe siècle. Nous retrouvons aujourd’hui à la tête du domaine Jean-François et Laurence, frère et sœur. Ils sont situés à Thouarcé avec 55 hectares de vignes qui enjambent le Layon et dont une partie est accrochée à la fameuse appellation Bonnezeaux. Le Domaine Des Grandes Vignes cultive plusieurs cépages typiques de La Loire : le Cabernet Franc, le Grolleau, le Pineau d’Aunis pour les rouges, le Chenin principalement pour les blancs. Leurs parcelles sont sur différentes expositions et différentes natures de sols : schistes gris et vert, phtanite, quartz, falun coquillé, sables, graviers roulés... La famille Vaillant pratique la biodynamie depuis 2008, pour exprimer l'authenticité des vins, ils accordent une attention particulière au travail à la vigne. La biodynamie permet au Domaine des Grandes Vignes une approche globale de la plante et de l’environnement en fonction des influences qui viennent de la terre, de l’air et de l’eau. La vigne s’épanouit dans le meilleur milieu possible, ce qui la rend moins sensible aux parasites et permet de limiter les applications de bouillie bordelaise. Le développement de la vie microbienne du sol est une priorité afin que les racines puisent tous les éléments utiles dans la roche mère. Ensuite, ils favorisent le développement de nombreuses herbes annuelles et vivaces, qui apportent une biodiversité favorable à l’écosystème. Le Domaine Des Grandes Vignes est aussi très attentif au rythme des planètes, cela aiguille le travail du sol. Sur la partie vinification, ils interviennent très peu sur les vins, aucun intrant exogène. Toutes les cuvées du domaine sont sans sulfites ajoutés non collés et non filtrés à l’exception des vins à sucres résiduels (2 à 3 mg/L de SO2). Attentifs au calendrier lunaire, ils favorisent les jours fruits pour les soutirages et les mises en bouteilles.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
