Domaine des Cavarodes
Domaine des Cavarodes, founded in 2007 by Étienne Thiebaud in Cramans, near Arbois in northern Jura, extends over 4.5 hectares of vines aged from 15 to 115 years. The estate practises organic, chemical-free viticulture, producing wines of exceptional purity that reflect the terroir on either side of the Loue, in Jura and Franche-Comté. Grape varieties grown include Savagnin, Chardonnay, Trousseau, Poulsard and Pinot Noir, on soils of marl, limestone and clay. The estate's main lieux-dits are Lumachelles in Mouchard, producing Chardonnay, Trousseau, Pinot Noir and Poulsard; Guille Bouton in Arbois, offering superb Chardonnay; and Les Messagelins, also in Arbois, producing Poulsard, Trousseau and Chardonnay. The wines are made naturally, often without the addition of sulfites, with semi-carbonic maceration for the reds after careful destemming and maturation in old barrels. Domaine des Cavarodes wines, renowned for their purity and strong identity, are increasingly sought after by natural wine lovers. The estate makes a point of respecting terroir and nature, producing authentic nectars expressive of the Jura terroir.
