Thomas Batardière, un voisin de palier du célèbre vigneron Richard Leroy, s'est installé en 2012 à Rablay-sur-Layon, au cœur de l'Anjou dans La Loire. Natif d'Angers, Thomas a suivi un parcours atypique qui l'a progressivement conduit vers le monde du vin. Après des études à l'École du Louvre puis en anthropologie, il a découvert sa passion pour le vin en travaillant dans la restauration. Encouragé par son patron à explorer la viticulture, Thomas a pris un break d'une semaine qui s'est révélé être un véritable déclic. Il a commencé sa carrière viticole en tant que salarié au Château Yvonne, où il a travaillé pendant trois ans. Pendant cette période, il a nourri le désir de se lancer à son propre compte. Après avoir cherché des vignes dans le Saumurois sans succès en raison des prix élevés du foncier, il a trouvé son bonheur à Rablay-sur-Layon, une région propice à l'élaboration de grands chenins équilibrés. 2012 marque son premier millésime. Thomas Batardière cultive un peu plus de 4 hectares de vignes en biodynamie. Ses parcelles sont idéalement situées sur des terroirs réputés comme le Clos des Noëls et à proximité des Aussigouins et du plateau de Montbenault. Ces lieux-dits sont connus pour leurs sols pauvres, parfaits pour produire des vins blancs de haute qualité. En cave, Thomas Batardière adopte une approche minimaliste et interventionniste. Pour les blancs, il évite le débourbage et limite les soutirages, cherchant à vinifier sans soufre. Les vins rouges résultent d'un long travail d'infusion, se révélant fins, délicats et fruités. Bien qu'il préfère réaliser des vins sans soufre, Thomas Batardière reste pragmatique et n'hésite pas à corriger ses vins si nécessaire, avec la filtration par exemple. Thomas Batardière fait partie de ces jeunes vignerons talentueux, son pragmatisme et son approche réfléchie de la viticulture le rapprochent de figures influentes comme Richard Leroy.

Created in 2010, Vinograf was taken over in July 2024 by Clara & Baptiste. With their experience with Marée Haute, they work to perpetuate Vinograf's strong commitments: a careful selection of established or novice artisan winemakers, all driven by the concern for excellence in their practices, in the magnification of terroirs and the search for authenticity of taste.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
