Laurent Tribut trained under Vincent Dauvissat, and it's hard to imagine a better mentor. This premier cru “cote de lechet” is a magnificent expression of terroir, complexity and mineral freshness. Hand-harvested and fermented in temperature-controlled enamel vats. Part of the wine is aged in old oak barrels, a standard feature of the estate. After light filtration, the wines are bottled. Clean and precise if you uncork it now, it should gain in breadth and complexity with a little patience in the cellar.

Laurent Tribut, marié à la sœur de Vincent Dauvissat, a appris les pratiques viticoles auprès de René et Vincent Dauvissat, figures respectées de Chablis. En 1987, il a établi son propre domaine à Poinchy, près de Chablis, grâce aux terres héritées de son beau-père. Le domaine de Laurent Tribut adopte une approche de lutte raisonnée, entraînant l'utilisation d'herbicides. Les traitements chimiques sont réduits au minimum pour préserver l'intégrité du terroir. La taille sévère pratiquée permet de limiter les rendements, favorisant ainsi la concentration des arômes dans les raisins secs. Les vendanges sont effectuées manuellement , avec un tri rigoureux à la vigne pour assurer la qualité des fruits récoltés. Les fermentations se déroulent avec des levures naturelles, respectant ainsi le caractère des raisins secs. L'élevage des vins dure 18 mois , combinant des fûts usagés et des cuves , ce qui permet de conserver la pureté du fruit tout en ajoutant une complexité subtile. Cette méthode d'élevage contribue à la profondeur et à l'élégance des vins de Laurent Tribut, qui sont issus de raisins souvent légèrement millerandés, améliorant ainsi leur complexité. Le domaine de Laurent Tribut s'étend sur sept hectares , comprenant quatre hectares en Chablis villages, près de deux hectares en premier cru Beauroy , 0,8 hectare en premier cru Côte de Léchet, et 0,2 hectare à Montmains. Cette diversité de parcelles permet à Laurent de produire des vins qui expriment fidèlement les caractéristiques uniques de chaque terroir. Les vins de Laurent Tribut sont réputés pour leur profondeur et leur élégance. Chaque cuvée reflète non seulement l'influence de la famille Dauvissat mais aussi l'engagement personnel de Laurent envers la qualité et le respect du terroir. Son approche méticuleuse de la viticulture et de la vinification continue de produire des vins exceptionnels, qui sont très recherchés par les amateurs de Chablis. En somme, Laurent Tribut incarne l'héritage familial tout en apportant sa propre vision de la viticulture de Chablis.

Several specifications correspond to these names. If we very often hear about sulphites, rightly accused of giving a headache, many other products can be used in the composition of so-called conventional wines.
Here is an overview of the different organic, biodynamic and natural specifications:
The organic specifications (AB label) prohibit any use of synthetic chemicals in the vineyards and in the winery. However, it allows some oenological crutches during winemaking. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites.

In biodynamics (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He will also use biodynamic preparations (fermented horn dung, silica, plant herbal tea, etc.) to strengthen the vines. Overall, the winegrower seeks to include the cultivation of the vine in a global environment. Sulphites can go up to 70 mg/L for reds and 90 mg/L for whites.

In natural wine (Vin Method Nature label), the specifications specify the use of organic grapes, fermenting naturally using native yeasts (as in biodynamics). Natural wines see no input during all vinification and aging. Only minimum doses of SO2 are permitted (30 mg/L maximum), and must be mentioned by the winemaker. No brutal filtration or wine alteration techniques are permitted. We also find the name SAINS Wines which aims to completely prohibit the use of sulphites.
